I switched to using the metric system for all of my brewing measurements a while back. It’s so much easier to deal with one unit for weight, volume, etc., and makes calculating percentages and such much more straightforward. I put together a quick list of common conversions used in brewing.

Weight
1 ounce = 28.3 grams
1 pound = 0.45 kilogram
1 kilogram = 2.2 pounds

Volume
1 liter = 1.06 quart
1 gallon = 3.8L
3 gallons = 11.4L
5 gallons = 18.9L
6 gallons = 22.7L
10 gallons = 37.9L

Temperature
Fermentation
0C = 32F Freezing
2C = 36F Lagering
8C = 46F
10C = 50F Lager Fermentation
12C = 54F
15C = 60F
18C = 65F Ale Fermentation
20C = 68F Diacetyl Rest
22C = 72F Diacetyl Rest
Mashing
35C = 95F Dough-in
45C = 113F Acid Rest
50C = 122F Protein Rest
55C = 131 F Protein Rest
65C = 149F Saccharification Rest
70C = 158F Dextrinization Rest
75C = 167F Mashout
100C = Boiling

Water / Grain Ratios
2L/kg = 0.97qt/lb
3L/kg = 1.45qt/lb
4L/kg = 1.93qt/lb
